Saint-Hilaire corresponds to the former commune of Saint-Hilaire-Saint-Florent, north-west of Saumur, along the Thouet and at the foot of the slope. Attached to Saumur in 1973, it has been a delegated commune since 2014 and keeps its delegated town hall.

The area is inseparable from tuffeau: its underground galleries house the cellars of the sparkling wine houses, such as Bouvet-Ladubay and Ackerman, as well as the mushroom museum, set up in former mushroom farms. It is also here, at the place known as Terrefort, that the national riding school and the Cadre noir are based.
